
MOTHER OF FUUUUU… my improvised chicken cacciatore tonight is sooo good.
I browned some chicken drumsticks and then threw them in a crock pot/slow cooker with diced tomatoes, tomato sauce, a splash of fortified red wine, some leftover wild rice with a bit of salmon, a spoonful of cream cheese and a mess of crumbled feta, a 1/4 teaspoon of truffled black olive tapenade, a spoonful of capers, some bacon salt and fresh ground pepper, a few generous pinches of ground bay leaf and Turkish oregano, and fresh chopped basil (mixed in and used as a garnish at the end). Finally, a surprise to balance it all, a 1/4 to 1/2 teaspoon or of cocoa, and lastly, a dusting of fleur de sel.
